1. Do card! There is never a good time, but this is the one of the worst timesto lose your liquor license. Remind your bartenders that not checking the ID and that slipping a cold one to the hot brunette who 21st bday is just 2 days isn’t worth it. Tell her to come back 2 days later – better yet, 3 days later.
2. Don’t overlook scheduling – your managers should never be surprised that this time of the year, your bartenders and servers suddenly have life-altering situations that occur on St. Patrick’s Day and during spring break. Lock your schedule early and have a plan B – which may be to schedule your more mature employees who have mouths to feed.
3. Do have specials. Why? Because of two not-so-complex reasons: 1) People want and expect, and; 2) Your competitors will have them.
4. Don’t wait to talk to your liquor rep & beer distributor. They want to make money just like you, which means they will be aggressively pricing certain products so they move fast. Figure out what they are, determine if they are good for your bar or concept and place your order fast.
5. Do have a mop and a bucket on deck!. You know by now what a lovely cocktail of Jägermeister shots, cheap well vodka and tequila can do for the stomach of those inexperienced drinkers. Yeh that’s right – empty it all over your floor.
6. Don’t let your register come up short. Sticky countertops aren’t the only things that paper adheres to during this hectic month.
